Bean and Corn Quesadillas

Here is the recipe for tonight's dinner. I used the leftover refried beans and corn from Burrito night.


  • 1/2 cup refried beans
  • 1 small avocado, diced
  • 1/2 cup whole kernel corn
  • hot peppers (optional)
  • shredded cheddar
  • 4 (8") flour tortillas
  • salsa
  • sour cream


  1. Place a pan on the stove over medium-low heat. Place a tortilla in the pan. Add a layer of cheddar then some beans, diced avocado, corn kernels and hot peppers. Add another layer of cheese and a second tortilla. 
  2. Cook until the cheese is melted enough to turn, about a minute. Carefully flip to the other side and continue to cook until the tortilla is crisp, the cheese is melted and the filling is hot.
  3. Serve with salsa and sour cream.
