Here is the recipe for tonight's dinner. I used the leftover refried beans and corn from Burrito night.
- 1/2 cup refried beans
- 1 small avocado, diced
- 1/2 cup whole kernel corn
- hot peppers (optional)
- shredded cheddar
- 4 (8") flour tortillas
- sour cream
- Place a pan on the stove over medium-low heat. Place a tortilla in the pan. Add a layer of cheddar then some beans, diced avocado, corn kernels and hot peppers. Add another layer of cheese and a second tortilla.
- Cook until the cheese is melted enough to turn, about a minute. Carefully flip to the other side and continue to cook until the tortilla is crisp, the cheese is melted and the filling is hot.
- Serve with salsa and sour cream.
