Irish Colcannon


Tonight I made Mushroom Meatloaf with Onion GravyRoasted Cauliflower and Irish Colcannon. Lots of cruciferous vegetables and totally delicious. I am happy I will have tons of leftovers and not have to cook lunch tomorrow.



Ingredients

  • 1 tbsp butter
  • 1/2 cup chopped onions
  • 2 1/2 cups thinly sliced cabbage
  • 1 cup finely chopped broccoli
  • 1/2 cup vegetable broth
  • 4 cloves garlic, minced
  • 3 cups mashed potatoes
  • 2 tbsp butter
  • salt & pepper to taste

Instructions

  1. Melt 1 tbsp butter over medium heat. Add onions, cabbage, broccoli and broth. Cover and cook until tender, about 10 minutes. Add garlic and cook until fragrant, about 1 minute more.
  2. Mix cooked vegetables with mashed potatoes. Add more butter if desired. Season with salt and pepper.
